Basil Make Believe Mayonnaise

I believe in homemade mayo, but I'm also a realist. Few people have enough time to make the real thing these days, so here's a quick substitute with some fresh basil that's great on all your summer treats.......

2 C Mayonnaise (I highly recommend Hellman's as there is no substitute)

1 Tbsp Tony Chachere's Creole Seasoning

juice of one lemon

1 bunch of fresh basil (about 10 or so leaves) chopped

Mix the mayo, seasoning and lemon juice and let stand about 5 minutes. Fold in the chopped basil and then chill in the fridge for about an hour to let the flavors mix.

Enjoy on cucumber sandwiches, on sliced heirloom tomatoes or your favorite sandwich.

"The weather is still like spring, clear and warm, and young silver leaves in all the trees. Golly, I miss the hills and fruit trees and things now. Think of all that grand country to walk and ride through, and yet folks will make their homes in a city! I feel like now I'd like to build me a log cabin out on Woodson Ridge and just set." - William Faulkner in a letter home to his mother,  March 8, 1925
